Averna is an authentic Italian amaro-type herbal liqueur (bitter liqueur) to support digestion. It was created by the monks of the Benedictine abbey Abbazia Di Santo Spirito in Caltanissette, Sicily, according to a secret recipe.
The exact formula of the herbal extract remains a guarded secret. However, we know that it contains specially selected herbs, roots and spices with additives of typical Sicilian aromas and flavors of essential oils from citrus fruits - oranges, lemons and pomegranates.
The aroma is characterized by citrus notes with aromas of herbs typical for the Mediterranean - myrtle, juniper, rosemary, sage, aromatic resin. The taste reveals traces of orange balanced by notes of licorice and Mediterranean herbs. The liqueur has a velvety round texture and a slightly bitter and sweet finish. Traditionally, we serve it undiluted, but you can also enjoy it with an ice cube.

The recipe was donated by Father Girolamo in 1868 to the textile merchant Salvatore Avern, as an award for the support of the village. Since then, Salvatore Averna has officially started producing liquor for his guests.
They built the first factory for its production in their family residence in Xiboli, Caltanisset, where the family spent the hot Sicilian summers. Today, this house is a working factory and they store herbs for making liqueur.
