Doba-Yej is a fresh floral mezcal with beautifully balanced citrus notes. You can ideally enjoy it neat or in cocktails. Doba-Yej in the ancient Zapotec language refers to maguey espadin, the most famous type of agave from which mezcal is made. The label on the bottle is decorated with a Mexican war hero.
Los Siete Misterios is based on sustainability. Mezcal is made only from mature agave plants. They wait until the plant has formed or is about to form a flower stalk, which happens just before the agave dies. The heart of the agave - piña is boiled for 3 to 5 days in traditional underground ovens made of clay and stones. It is then crushed with a handmade wooden stick or with the help of Chilean horses pulling a traditional device called a tahona.
They store the juice and fibers in large wooden vats with access to air, where they ferment quite naturally thanks to the temperature and wild yeasts. They only add pure spring water. Finally, the mixture is distilled in copper or clay cauldrons.
Brothers Eduardo and Julio Mestre founded Los Siete Misterios (translated as seven secrets) in 2010 with the aim of creating a distillate representing the customs, culture and passion of Mexico - mezcal. They spent years tasting mezcal in villages all over Oaxaca. They met local maestros mezcaleros who have been perfecting traditional techniques for generations. In an effort to preserve this ancestral knowledge, Eduardo and Julio teamed up with experts to collaborate on a modern approach to traditional mezcal.
